At La Transformerie, it's simple; they believe that it is possible to prevent food waste. Les Rescapés was their first food waste reduction project. They transform fruits left behind by grocery stores into exceptional and delicious homemade spreads, in the heart of Rosemont-La-Petite-Patrie, in Montreal. Cooked with lots of love and a simple list of ingredients, these products are vegan and low in sugar.
For each pot sold, it allows them to collect 12 kg of food and to redistribute 8.6 kg from that amount to local food banks.

In October 2016, Thibault challenges his friend Guillaume to cook a gastronomic meal entirely from ingredients salvaged from grocery stores’ dumpsters. In Guillaume’s mind, former chef at Les 400 coups restaurant, such a challenge couldn’t be a good omen. Still, with sportsmanship, he accepted the challenge. This peculiar experience triggered a profound reflection on food waste. Soon after, their friends Bobby and Marie joined them to contribute to the reflection. Co-funded by the four acolytes, the NPO officially came to life on July 17, 2017.
